Our six-month storage guide gives you the procedure: glass, darkness, humidity pack, cool shelf. This companion piece is the why — the actual science of what's happening inside a sealed jar of flower, and why the cheap salt-pack technology works as well as it does. None of this is required reading to store flower well. All of it makes you harder to fool at the point of sale.

Water activity: the number behind the humidity number

What matters to stored flower isn't exactly "how wet is it" but water activity (aw) — how available the water is to microbes and to the air. Water activity runs 0 to 1, and equilibrium relative humidity is water activity × 100: flower at 0.60 aw maintains 60% RH in a sealed container around it.

The safe window for cured flower is roughly 0.55 to 0.65 aw — the same 55–65% RH range you'll see cited everywhere, and the basis for cannabis storage standards like ASTM's:

  • Above ~0.65: enough free water for mold to work with. Aspergillus and friends don't need the flower to be visibly damp; they need available water, and 0.70 aw is an invitation.
  • Below ~0.55: microbially safe but physically punished. Trichomes turn brittle and snap off with handling, buds crumble to dust in the grinder, and the material smokes or vapes harsh.

Commercial flower is dried and cured into this window before packaging — in theory. In practice, shipped flower arrives all over the map, which is why the correction technology matters.

How a two-way humidity pack actually works

The packs (Boveda and Integra Boost are the common brands) are an elegant piece of kitchen chemistry: a saturated solution of specific salts in a water-permeable membrane. A saturated salt solution maintains a fixed equilibrium humidity at a given temperature — a property so reliable that salt solutions are how hygrometers get calibrated. The pack exploits it in both directions: jar air too dry, the pack releases vapor; too humid, the pack absorbs it. No electronics, no judgment calls, a stated setpoint held for months.

Choosing the number: 58% suits vaporizer users — slightly drier material grinds fluffier and extracts more evenly — while 62% keeps buds a touch more pliable, which some smokers prefer. Within the safe window it is genuinely preference. Replace a pack when it stiffens; a rigid pack is an empty buffer. And note the honest limitation printed in the physics: a humidity pack manages water. It cannot restore anything else the flower has lost — a pack can re-moisten hay, but it cannot un-make hay.

One practical instrument note: the $5 stick-on hygrometers drift badly. If you're monitoring jars with one, calibrate it occasionally with the saturated-salt test (table salt slurry in a sealed container reads 75% RH at equilibrium) or accept its reading as a trend line, not a measurement.

Terpene loss: why aroma fades in a specific order

Terpenes — the aromatic compounds that are the entire flavor identity of a strain (field guide here) — are volatile by definition, and they are not equally volatile.

The monoterpenes are small, light molecules that evaporate readily even at room temperature: myrcene (musky-fruity), limonene (citrus), pinene (pine), terpinolene (fresh-floral). These are the bright top notes of fresh flower, and they leave first. The sesquiterpenes are heavier and more persistent: caryophyllene (pepper-spice), humulene (woody-hoppy). They linger.

This explains a pattern every flower buyer eventually notices: aged flower doesn't just smell weaker, it smells different — flatter, woodier, less bright — because the profile has been selectively stripped from the top. It's also why ground flower goes stale in days (surface area is the terpene exit door), and why total terpene content on a COA only describes the day of the test. Storage temperature matters here more than anywhere else: terpene evaporation roughly tracks warmth, which is the scientific case for the cool shelf.

The cannabinoid clock: THCA to THC to CBN

Two slow reactions run in every jar, and together they make a chemical clock.

First: THCA → THC. Decarboxylation doesn't wait for your vaporizer; it proceeds at room temperature over months, just slowly (the full chemistry is in our decarb explainer). Warmth accelerates it.

Second: THC → CBN. With oxygen and UV exposure, THC oxidizes into cannabinol. CBN is a minor cannabinoid with one great forensic virtue: fresh, well-stored flower contains almost none, so CBN on a COA is a freshness gauge. A few tenths of a percent is normal life; a CBN line pushing toward 1% on flower sold as fresh means the material is old, was stored badly, or both. It's one of the quieter numbers we check when auditing vendor paperwork — harvest and test dates make the same point more directly, which is why they're on our vendor checklist.

Light deserves its special mention here: UV drives both cannabinoid degradation and general photochemistry faster than any other single factor. Darkness is the cheapest preservation technology in this article.

Reading freshness at the point of sale

Assembled into a buyer's toolkit, the science gives you five checks:

  1. Test and harvest dates on the COA — the only direct evidence of age. Under six months is what we like to see for flower.
  2. CBN line — near-zero for fresh material.
  3. Total terpenes — across menus we analyze, above 1% is respectable and above 2% is loud; a published panel also proves the vendor measured it recently.
  4. Feel — a bud should flex slightly before breaking. Dust or mush are both verdicts.
  5. Aroma specificity — flower should smell like something in particular. Generic hay smell means the monoterpenes have already left the building.

Store what you buy behind glass and darkness with a pack (the containers that do it well), and the clock slows to a crawl. It never stops — a fact worth respecting in late 2026, when the federal ban arriving November 12 has buyers stocking deeper than usual (what changes and when). Six months is a storage plan. It is not an excuse to buy flower in quantities you'll be sad about in year two.
